This month's cake is from the cookbook, Sky High: Irresistible Triple Layer Cakes by Alisa Huntsman. I opted to make the cake into cupcakes because I had promised a friend some cupcakes, so I killed two birds with one stone.
They are a light cupcake with a hint of lemon flavor, and crunch of poppyseeds. The frosting is an almond cream cheese buttercream. I thought that the frosting was delicious, but overpowered the cupcake....I really couldn't taste any lemon.
Verdict - I will definitely make these again, but next time will use more lemon in the cupcake and less almond in the frosting....

ReplyDeleteCupcakes for a friend- I bet she loves you! Definitely try some zest in the frosting next time and forgo the almond- they were quite delicious that way.
